Magloubeh, Maqloubeh, Maqluba or Maqlooba is a humble Middle Eastern rice based dish served throughout the Levant. The word magloubeh literally means “upside down”, because traditionally after its cooked, the pot is flipped upside down to serve.
This is our plant based version of slow-cooked Egyptian rice infused with black lemons, whole fragrant spices with aubergine, cauliflower, crispy onions and pomegranate seeds.
